Welcome to week 2 of my “Festive Food Friday” posts!

It’s December 1 TOMORROW and we’ll be putting up the Christmas tree. Okay, I’ve already decked the rest of the house because I just couldn’t wait, but my family seems to think it has to be December for the full blown trimmed tree, so I capitulated. Bah humbug.

And so tomorrow my men folk will be serenaded with the likes of Buble caroling and crooning, and treated to Christmassy goodies galore as we fluff branches and detangle lights. I just know they’re excited on the inside!

The recipe below is a wonderfully quick, melt-in-you-mouth cookie to whip up- I’ve adapted it slightly for the festive season using white chocolate instead of semi-sweet. Add red or green sparkly sprinkles, crushed candy canes or coconut on top for added Christmassy-ness! You may want to double up this recipe, as they freeze beautifully.

1 cup butter/ margarine
½ cup icing sugar
1½ cups flour
½ cup cornstarch
1½ cups white chocolate chips
optional topping- coconut/sprinkles/ crushed candy canes

*Preheat oven at 300 degrees
*Beat butter and icing sugar
*Combine flour and cornstarch, then add gradually to mixture
*Stir in 3/4 cup of chocolate chips
*Roll into small ball shapes (about 1½ “) and place on baking tray
*Bake for 15-18 minutes
*Cool cookies, and then melt remaining ¾ cup chocolate chips
*Dollop a blob of chocolate on top of each cookie, plus topping if desired. ENJOY!
