Here we are- the final Festive Food Friday– which means Christmas Day is just around the corner! As always, it crept up on us stealthily and we are frantically trying to remember what we have forgotten…

Personally, I am filled with relief and joy now that my daughter is home for Christmas! You just never know for sure when you have to make 3 flights in the middle of a Canadian winter, but last night she arrived home safe, sound and beautiful! Girly time begins! Mother hen is happy now that all her chicks are tucked safely in the coop.

So for my final week I have saved my favorite brownie recipe of all time. I tend to only make it at Christmas to keep it special, so it’s become one of my yummy traditions. If you like chocolate, coffee and sheer decadence, this is your new best friend… ENJOY!

 

 

 

 

 

 

 

 

 

 

MOCHA TRUFFLE BROWNIES

1 ¼ cups semi-sweet chocolate chips

½ cup butter/ marg

1 tsp instant coffee

2 Tbsp hot water

2 eggs

¾ cup packed brown sugar

¾ cup all purpose flour

½ tsp baking powder

(Filling)

1 Tbsp instant coffee

1 Tbsp hot water

1 pack (8 oz) cream cheese- softened

1/3 cup icing sugar

1 cup semi-sweet chocolate chips

(Glaze)

¼ cup semi-sweet chocolate chips

1 tsp shortening

 

*Melt chocolate chips and butter in a saucepan or the microwave, stir until smooth

*Dissolve coffee in water; set aside

*In a mixing bowl, mix brown sugar with eggs for 1 minute

*Add chocolate and coffee mixtures to the mixing bowl- beat until incorporated

*Gradually add flour and baking powder to the mixing bowl; combine

*Transfer to a greased 9” square baking pan

*Bake at 350 degrees for 30 minutes, then cool completely

*Dissolve coffee in water; set aside

*Beat cream cheese; add icing sugar

*Melt chocolate chips in microwave; add to cream cheese mixture along with coffee

*Spread over cooled brownie

*For the glaze- melt chocolate chips and shortening in microwave; stir

*Drizzle over cream cheese layer; refrigerate at least 2 hours before cutting
