Just in case your December is starting to get a little crazy already (I know mine is!), I’ve got an easy-peasy recipe for you to make and freeze for your Christmassy delight.

I realize most, okay ALL of my recipes include chocolate, but I am a firm believer in serving the best possible sweet treats, thus chocolate is a staple. I hope you understand…

WARNING: If, like me, you are a little lacking in the self-control department when it comes to chocolate, might I suggest you use your least favorite kinds for this recipe? Might sound strange, but I know I have to avoid milk choc because I tend to find my paw in the handy-dandy freezer bag full of deliciousness at various desperate points of the day. If I use chocolate I am slightly less addicted to, such as white or semi-sweet, the bags tend to stay fuller for longer. Remarkable.

In a couple of hours I am speeding off (very carefully and responsibly over the snow-laden mountain highways) to Vancouver for a fun weekend with my favorite guys. Lots of Christmas shopping, taking in the festive atmosphere, and as a special treat we’re going to our first Cirque du Soleil show “Amaluna”. Can’t wait!

I rest easy knowing my CHOCOLATE COOKIE BARK is ready-made and frozen, along with a growing pile of other Christmas goodies. You can never be too prepared when it comes to Christmas! Here’s the recipe- ENJOY and have a wonderful weekend!

CHOCOLATE COOKIE BARK

1½ cups semi-sweet chocolate chips
1½ cups white chocolate chips
2 tablespoons smooth peanut butter
10 Oreo cookies (or alternative cookie if you’re not an Oreo fan)
red/green sprinkles if desired

-Pour white choc chips in a bowl and microwave until melted (approx 90 seconds)
-Add peanut butter and stir
-Pour semi-sweet choc chips in a bowl and microwave until melted (approx 90 seconds)
-Crumble 5 cookies into EACH bowl of chocolate; mix well
-Drop spoonfuls of mixture onto a waxed-paper covered tray, alternating in “fat stripes” until you have formed a large, flat rectangle shape
-Carefully cut through the surface in swirl motion to mix the colors and give a swirled effect
-Sprinkle with sparkly sprinkles to give a festive look
-Refrigerate for 1 hour until firm; break into pieces
-Store in an airtight container in the fridge or freezer
